Zucchini
Zucchini is one of the most prolific plants in the gardening world.
You know it is a member of the squash family and considered a vegetable.
In fact it really is the flower’s oversized ovary. No matter I love the stuff.
I never have been real crazy about having it stewed but do add some to certain stews
and soups.
Liking it crunchy I do this on the gril, in the oven or deep-fried. Just a little salt, pepper, and a touch of garlic and I’m happy.
Zucchini Bread is also a favorite. I have been known to offer some as a Christmas present.
Have you tried the flowers? They are tasty too. Adding them to a salad or sautéing then in some olive oil works. Ever tried adding it to pasta? How about Chocolate Zucchini bread or cake?
Harvesting the flowers is a good way to control your production.
Squash in general has its benefits. They also keep well frozen but the texture becomes soft. Just right for the bread at Christmas.
Low in calories but high in folic acid (vitamin B9, vitamin Bc), Potassium and vitamin A, C, and dietary fiber. A 1/2 cup of zucchini also has 19% of the recommended amount of manganese.
Zucchini has its day too. August 8th is Sneak Zucchini On Your Neighbor’s Porch Night. Reaping far more zucchini than they can possibly use gardeners have to put the squash to good use after their friends start avoiding them. I’m told a unlocked parked car is an idea too.
